Food Service Staff Brings Home First Place Award
Sodexo held a culinary food event at Sno-Isle Culinary Tech School on April 22. There were five school districts represented at the competition: LWSD, Sequim, Kennewick, Monroe and Mukilteo. Each district had a team of five members. The five team members for LWSD were: Stacey Kalina, Redmond High School; Jane Markham, Redmond Junior High; Elaina De Dios, Evergreen Junior High; Mary Higgins, Rose Hill Junior High; and Dee Dee Hawkin, Kirkland Junior High. The menu and recipes were given to each team prior to the event. On the day of the event, ingredients for the recipes are supplied to the teams and one additional “surprise” ingredient is added that must be used somewhere in the team’s dishes. The teams made Chicken Kiev, Chunky Vegetable Paella and a pasta salad peperonata with raisins and balsamic vinegar. Their surprise ingredient was green tomatillos. They were sliced and used as a garnish on the salad and also were boiled, peeled and made into a green salsa then piped decoratively out onto the main entrée plate. The team brought home the first prize chef’s choice for best recipe execution.
